James and Angel Aguayo opened the first Sushi Sake on Bird Road in 2009 so the suburban Miami neighborhood they lived in could get good fish and a late dinner.
Fifty three restaurants later, every kitchen runs on the same rules. Sauces come from one commissary, seafood arrives fresh, the beef is Certified Angus, and the menu costs the same wherever you sit.
